Tomato fruit can be harvested at different stages, depending upon distance and time needed to market the fruit. For long distance transport, fruit can be harvested at the breaker stage (not more than 10% of the surface is tannish-yellow, pink, or red). Fruit for local sale can be harvested at later ripening stages.

Poor care of fruit after harvest will lead to poor fruit quality. Avoid fruit injury and do not mix damaged with undamaged fruit. Harvest during cool periods, such as late afternoon or early morning. Shade the harvested fruit and avoid exposing fruit to temperatures higher than 25°C. If possible, store the fruit in a ventilated place with a relative humidity range of 85-90% to slow water loss.
